To select bar / column charts, you select Bars in the menu. To create a column chart switch the orientation to Time.
Multiple Series
The series of a bar chart are made up from the measures in the Values field. Additionally the dimension in the Stack / Column field creates a series for each member, when in Stack Mode.

Grouping
When you are selecting Column Mode you get bar charts grouped in columns by the Stack / Columns dimension.
